Preparation: 20 minutes
Cooking: 20 minutes
Total: 40 minutes

Serves:

Ingredients

  • ¼cupcorn oil, plus more for greasing
  • 1cupwhole wheat flour
  • ½cupall purpose flour,unbleached
  • ¼cupsoy flour
  • ¼cupsesame seeds
  • 1tspsalt
  • 1cupwater,cold, or more if needed

Instructions

  1. Preheat the oven to 350 degrees F. Lightly oil a large rimless baking sheet.

  2. Place the flours, sesame seeds, and salt into a large bowl and mix well. Make a well in the center and pour the oil and water into the well.

  3. Stir with a fork until blended, adding more water if necessary to make a smooth but not sticky dough that forms a firm ball.

  4. Place the dough in the center of the baking sheet and roll it out to a ⅛-inch rectangle. Score the dough into 1½ to 2-inch squares with a knife, but do not cut completely through the dough.

  5. Bake for about 20 minutes until crisp and golden. Watch the crackers carefully as the seeds easily scorch.

  6. Serve and enjoy!
