What the Italians Know: Strawberries & Balsamic Vinegar
Like irony, Balsamic vinegar should be used sparingly. A small amount of the deeply flavored liquid accents foods, and highlights flavors. Too much, as is often the case, drowns and masks essential flavors.
As a kid from New York suddenly living in a little village in Piemonte, Italy's far northern region hugging the Alps, I was astonished by many things that I had never experienced. Vinegar used on strawberries didn't make any sense to me until I tasted them, and what a revelation it was.
Select the ripest and most fragrant berries you can find. Slice the berries once lengthwise. If you have a clean kitchen sprayer, add some Giusti balsamic vinegar and spray the berries gently, tossing to lightly coat all. Serve immediately as they are, with a dollop of fresh whipped cream, or atop the best vanilla ice cream you can find.
