Pietro Giusti "Family Reserve" Balsamic Vinegar

Since the 1800s the history of Balsamic vinegar becomes the story of many Modenese families, who for centuries have handed down and jealously guarded the recipes of this elixir.

From those times the tradition was born of starting a new group of barrels in celebration of the arrival of a new child, leaving the barrels for their future wedding day.

Giusti dedicates the collection “Family Reserve” in honor of this tradition, a selection of four diverse qualities of Balsamic Vinegar aged in the private barrels of family members.

THE GREAT RESERVE OF GIUSEPPE GIUSTI Renowned not only in Modena, but around the world as the largest antique collection of rare barrels, dating as far back as the 1600s, is the “Gran Deposito”, the Great Reserve of Giuseppe Giusti. Reputable balsamic vinegar is extracted after years of aging and mixing with vinegars made throughout the centuries in the oldest barrels, drawing aromas and flavors already created centuries before. Conscious of this, the Giusti family has throughout the centuries carefully maintained the collection in order to balance the delicate characteristics of the celebrated “Giusti bouquet of aromas”.

Thanks to the learned use of these precious “woods”, the Giuseppe Giusti Acetaia is able to achieve an aromatic equilibrium of the balsamic vinegars, transferred from larger to increasingly smaller barrels and finally extracted to create olfactory and aromatic pleasure.
