The "Mosto Classico" and "Mosto Oro" Extra Virgin Olive Oils are the pride of the Calvi company. They are produced from the finest Taggiasca olives (a variety of olives exclusive to the hills of the western Italian Riviera) in the "Valle di Oneglia". They are harvested by hand from late January to March, at their maximum ripeness, and immediately cold pressed in a traditional mill.
"Mosto," translating to unfiltered, speaks to the production of the oil, as it is bottled just as it comes from the mill without any treatment after the natural decantation period.
With its golden color and extremely mild and almond flavor, the extra virgin olive oil "Mosto Oro" enhances the most refined dishes and is especially recommended for fish. "Mosto Classico" has a sweet, fresh, and fruity taste, making it a great choice for dressing vegetables, salads, and more delicate dishes.
