The collection includes one each of:

  • Smoked Sea Salt, Iburi-Jio
  • Smoked White Sesame Seeds
  • Soy Salt, premium shoyu in unique flake form
  • Smoked Shoyu (3.5oz)

Iburi-Jio, smoked sea salt, is a beautiful beige color and its aroma and flavor are distinctively smoky. Our smoked sea salt starts with premium quality sea salt collected from the unpolluted, deep-sea water from off shore of the Oga Peninsula in northern Japan, and slowly crystallized over a wood fire for three days. The resulting sea salt is rich in minerals - magnesium, calcium and potassium, thus its flavor is complex and round.

The justly famous Enji Company challenged the notions of smoking and invented a smoker for liquids such as shoyu, leading to the birth of the Kunsei Shoyu, smoked shoyu (soy sauce). When you open a bottle of Kunsei Shoyu the distinctive shoyu aroma is wrapped in fragrant smokiness. The mingling of fragrance and flavor is superb.

Enji Company now produces these decadently delicious smoked white sesame seeds, which contain more oil than black sesame seeds. When you open the package of our Smoked White Sesame Seeds, the rich fragrance immediately tempts you to pop some seeds into your mouth to savor their crunch and delicious smokiness.

Soy Salt is light, flaky, aromatic and flavorful. It blends modern technology, human creativity and traditional artisan-made soy sauce produced by a 254 year old family-owned Japanese brewery. Use Soy Salt as a new and exotic garnish for any dish requiring additional saltiness and excellent flavor.
