Iburi-Jio, smoked sea salt, is a beautiful beige color and its aroma and flavor are distinctively smoky. Our smoked sea salt starts with premium quality sea salt collected from the unpolluted, deep-sea water from off shore of the Oga Peninsula in northern Japan, and slowly crystallized over a wood fire for three days. The resulting sea salt is rich in minerals - magnesium, calcium and potassium, thus its flavor is complex and round.
The justly famous Enji Company challenged the notions of smoking and invented a smoker for liquids such as shoyu, leading to the birth of the Kunsei Shoyu, smoked shoyu (soy sauce). When you open a bottle of Kunsei Shoyu the distinctive shoyu aroma is wrapped in fragrant smokiness. The mingling of fragrance and flavor is superb.
