Saffron is the world's most costly substance, arriving in the West along the ancient Silk Road. Prized for its presumed medicinal and erotic properties, the Romans of the Empire loved it. By 14th century saffron was in wide use as a spice, color and medicine. Venice, having fleets and access to the entire Mediterranean, rose on a sea of saffron, ruling Mediterranean trade for centuries.

    I use The Ingredient Finder’s wonderfully flavorful Pure Moroccan Saffron, which won’t break the bank. And no reason to spend a lot of money on the lamb. Shoulder or Round Bone Chops will work very well.
