Daniele Kucera

Meet Daniele KuceraMost of Daniele’s fondest memories of childhood involve his grandmother and food.  At age six, one of his favorite past times was to sit in the kitchen listening to Beethoven and watch his mother and grandmother work their magic on their old wood-burning stove. Growing up in Trieste and Fiume on the Italian-Croatian border, Daniele had the opportunity to experience a wealth of cultural influences from Austria, Hungary and Germany.

After graduating from University, Daniele found a job in an 18-room family-run hotel where he learned about the business from the ground up, working every position from dishwasher to housekeeper, cook and front desk manager. In 1992, Daniele was approached in Rome by someone who was helping Mr. Tony May find managers for his new restaurant in New York City. It was an opportunity that he could not turn down, so he moved to New York and started to work at San Domenico as a manager and maître d’.  There, he met Franco Lazzari, who shared his spirit and work ethic. Several years later, after going their separate paths, Daniele and Franco reconnected with the vision of a contemporary Italian restaurant, combining traditions of their own culture and experience in major New York City restaurants.

Etcetera Etcetera, is an elegant midtown eatery that quickly became known not only for its exquisite Italian cuisine but also for its impeccable staff and sleek, cozy design.  Never one to shy away from innovation, Daniele has cleverly built upon his restaurant’s success by incorporating classical concerts, creative cabarets and cooking classes into the mix, while also hosting visiting chefs and presenting new and innovative theatrical events.  Etcetera Etcetera is now a shimmering neighborhood fixture appealing nightly to a lively fusion of loyal regulars, hungry theatergoers and curious tourists, not to mention the folks booking private parties such as birthdays and weddings with Daniele’s expert supervision. For Daniele, it is a continuation of his childhood dreams – creating a fresh and fun atmosphere where people can relax and meet other interesting people while dining on tasty dishes from his inspired and constantly evolving menu.

    This recipe is perfect from a holiday houseful. The name "Arancini" means "little oranges" not only from the shape and size, but the lovely tint from the Saffron. Found throughout Sicily where they are a great snack any time of day.
