Best summer salad in just four easy steps! I love this version of one of my favorites, serve this south-of-the-border salad with fresh chips, guacamole and tacos and have the perfect dinner party ready in minutes.
- Cut watermelon into bite size cubes.
- Slice jalapeno paper thin. Sprinkle jalapeno and feta ontop of watermelon along with leaves of mint and cilantro.
- For dressing mix equal parts lime juice and vinegar, and add agave, salt and pepper to taste. The dressing should be sweet and sour with a bite.
- Pour dressing over top of salad and serve!
