This super quick and easy recipe is a fun take on a old classic. Grilling adds tons of flavor to the avocado. I love serving this alongside a ceviche for a heartier meal or on its own for a light lunch or a late afternoon snack. In just four easy steps this dish is a stunner and could not be simpler.
- Heat your grill or grill pan on high.
- In the meanwhile, place a large handful of cilantro, along with half a jalapeño, the juice of one lime, four tablespoons olive oil, and a pinch of salt, in a blender and blend until smooth.
- Cut avocados in half and place on the grill until slightly warm and chard.
- Serve right away, drizzle with dressing, cilantro leaves, chili slices, and sea salt.
