Tomato Season is here at last! Every year we wait as the tomatoes ripen in the garden, showing up first in local farm stands and markets. But when ours are perfect we want to treat them perfectly. I usually add just a touch of vinegar and some very good olive oil, but find too often that the vinegar has taken over and obliterated the flavor of the tomatoes. And then I discovered our Garnacha Wine Vinegar from Spain’s north. What a difference! That plus a drizzle of 100% Arbequina Olive Oil, a few leaves of fresh basil and WOW!
