What did the Baron de Rothschild know about Morocco? He knew that its magnificent climate and soil make an ideal place to grow wine grapes and olives so he located one of his renowned estates there. Now, those same olive groves produce what is considered to be the "champagne of olive oil", from a unique terroir with 200 year old trees producing a stunningly complex olive oil with unparalleled taste and fruitiness. The oil is composed of 80% French Picholine du Languedoc, Picholine Marocaine, and Moroccan varieties Menara and Haouzia. Add to this knockout flavor enhancers like Preserved Lemons, Caper Berries and Barley Cous Cous, and you have the foundation of an authentic Moroccan feast.
