Piment d'Espelette is AOC from the Basque region of France, a highly regarded and sought after pepper. The growing region is limited to 10 villages to ensure the precise production process. The chilies are strictly harvested by hand and cultivated in fields of fresh air with a specific planting density. Piment d’Espelette arrived from the New World 500 years ago, acclimated to the south of France and now returns to the Americas. Its flavor is sweet with slightly bitter notes, and medium heat that builds and lingers. It has a toasty, hay fragrance with a note of fruit. The group includes the pepper itself as a powder, blended with Fleur de Sel, as a jelly, and steeped in French Olive Oil, which is rare in itself.
